O refrito xa sabes que se fai botando unha pinga de aceite nunha tixola pequena e no aceite bótase uns allos cortados en láminas. Cando vexas que o allo comeza a torrar, sacas a tixola do lume e cando vexas que enfriou un pouco, bótaslle un pouco de pemento doce e remexes ben cunha culler ou garfo mellor de madeira, e remexendo volves a poñelo outro pouco no lume para que non che enfrie de todo e logo bótasllo ao chicharro e ós cachelos por riba.&lt;br /&gt;Ó refrito hai quen lle bota unha gota de vinagre, pero a min fáiseme moi forte e tamén hai que lle mestura un chisco de pemento picante polo medio do doce. Ábroos como o bacallao e bótolles sal grosa (coma que se lle bota ó polbo á feira), tanto por dentro como por fóra. Déixoos así dun día para outro e volvo a lavalos e logo cólgoos a secar a poder ser ao sol.
